Chef’s incredible reinvented vanilla slice – complete with fluffy custard and mango 

A celebrity Australian pastry chef has reinvented the humble vanilla slice – using fresh mangoes to take it to the next level.

Sydney chef Andrew Bowden posted a photo of the effortlessly fluffy pastry online and said after 43 minutes of deliberation he had decided it was time to give the traditional dessert a face lift.

‘We sent her on a two week vacation to sort herself out, and this is what returned,’ he said, cheekily on the post.

‘A lush slab of mango custard sandwiched between two crispy pieces of caramelised puff, a creamy quiff of vanilla chantilly and finished with silky ribbons of fresh mango.’

The chef said the dessert was ‘new to the cabinet’ at his Enmore-based eatery Saga.

‘She’s the hottest thing at Saga since me in speedos lathered in coconut oil,’ he joked. 

This isn’t the first time a chef has taken it upon themselves to improve the old-time favourite.

Australians were recently drooling over new vanilla slices flavoured with Lotus Biscoff and Cadbury Caramilk.

Self-taught baker ‘Costadina’ whips up the extraordinarily decadent treats in St Clair, west of Sydney.

The Caramilk slice is a caramel lovers dream, stuffed with creamy vanilla custard and topped with thick shavings of caramelised white chocolate.

Cinnamon fans will prefer the Biscoff version, packed with a rich layer of the distinctive spread and decorated with crumbled pieces of the iconic Belgian biscuit.

The slices – along with a wide range of cakes, doughnuts and pastries – can be ordered from the Instagram page ‘Oh My Gosh Desserts‘, where Costadina has been selling her creations since 2015.

Her signature style of baking has attracted an audience of 10,500 followers, many of whom send custom requests via Instagram’s direct message feature.

But you’ll have to be patient if you’re looking to get your hands on any of the indulgent sweets, because the next available delivery is February 6.

Photos of the slices have sparked dozens of delighted responses since they were uploaded online, with many tagging their friends begging them to order some.

‘Okay I’m just drooling right now,’ one person wrote.

‘Dying! This is the dessert dream,’ said another. 

‘Damn, they look delicious,’ a third agreed, while a fourth called the Caramilk flavour ‘divine’.

Others said they ‘can’t wait to order’ the treats when delivery resumes next month.
